Baklava For Christmas

RECIPE
(Sweetened Nut Pastry)

Ready in 90 minutes

Serves 12+ people

One of the Best recipes, to make around, the Christmas, and Winter Holidays, is homemade Baklava. The very best is to stick to the traditional type as much as possible, with the only exception, to the rule, for me, is changing out the nuts, if you prefer some other ones to use. My son, Nick, asked for this. One of my biggest traditions, in our own home is making Greek Christmas traditional cookies. As my daughter called it, meaning our Greek Christmas cookies, mom, this is our family tradition! I thought, when does every year making our Greek Christmas cookies ever become, a family tradition! That, and her other favorite saying is, sharing is caring! So, the Baklava, comes in as running the last item, coming in, from the race. So, for this reason, my son, Nick, has bought, store bought, Baklava, which does not even come in second, in this race. I would love, to start the site, with some homemade Baklava recipes for his reason, alone.

Instructions

  • Combine nuts, sugar, cinnamon, and orange rind: mix thoroughly. Brush a 16 x 11 ½ x ½ inch baking dish with butter. Lay a sheet of filo in the bottom; brush with butter.
  • Cover with another sheet of filo; brush with butter and repeat process until 6 filo sheets are used. Keep filo covered with a damp cloth as you work to prevent drying out. Sprinkle a thin layer of nut mixture over filo; cover with another sheet of filo.
  • Brush with butter and sprinkle with nuts. Repeat the process until all of the nut mixture is used, leaving 4 sheets of filo to cover the top. Brush with butter.
  • With a sharp knife, cut through top layers diagonally to form diamond shapes.
  • Bake in a 350 degree oven for 1 hour.
  • When evenly browned, remove and pour syrup evenly over Baklava so that the syrup covers and penetrates the layers.
  • Allow to stand several hours or overnight before serving.
  • Syrup As Follows:
  • Combine sugar, 1 cup of water and 1 cup of honey in a saucepan; then bring to a boil. Squeeze lemon juice into syrup, and drop lemon rind peel in also, if you wish to do so. Then add the whole cloves and simmer for 10 minutes, afterwards strain the whole cloves, or pull then carefully out of the hot syrup, with a fork, or a spouted spoon carefully watching, for the syrup will be hot. Always be tending to the hot syrup, while it is cooking on top of the stove. Tend to it, and lower heat, if necessary. Or, stir it gently, from time to time.

You can choose to use all ground walnuts instead. This will then make it, 3 full cups, of coarsely ground English Walnuts. No Pecans, at all. They can also be more finely ground up. Best tip to give you would be a handheld device, These are not ground up like nut butter.
Note: Filo dough is available in specialty food  stores.

Baklava For Christmas

Some Years ago I had an idea for a website. I started it, but I could not continue it to have this dream website established!

Since then, and a lot of effort of debating should I try to make another go of it, this site was, or is being formed!

We hope you enjoy it. The memories of my childhood and growing up in a very classic, Greek home, with all of the wonderful aromas of ma cooking!

I hope you enjoy some of the recipes, and I enjoy hearing from you on them. Tell me what kind of recipes, you would like to see on here. I will try to do my best to find some recipes like those and post them for you!
